From grain to loaf on a quiet kitchen morning 🌾

Making sourdough with fresh-milled flour keeps the entire grain intact—the bran, germ, and endosperm—so none of the natural nutrients are stripped away. Fresh milling preserves vitamins, minerals, and healthy oils that begin to oxidize once flour sits on a shelf.

Fresh-milled flour also absorbs more water and ferments differently, which can improve texture, flavor, and digestibility when paired with sourdough’s long fermentation. The natural enzymes and wild yeast work together to break down the grain, creating bread that’s more nourishing and satisfying.

It’s slower, more hands-on, and intentional—but this is how bread has been made for generations. Real grain, real fermentation, real food.

I have seen a lot of confusion with how to maintain your sourdough starter…

Let’s keep it simple👉🏻

✨If your sourdough starter is stored on the counter, feed every 24 hours.

✨If your sourdough starter/discard that is not being used, store it in the fridge. Make sure it’s in a jar with a tight lid in the back of the fridge. Take it out once a month and stir it or keep adding to it.

Your discard can be used as long as there is no signs of mold.
